West Africa
Gambian food
A small country surrounded by Senegal, cooking with the same river and the same fish, but with its own hand. Domoda, groundnut stew sharpened with lemon, is the dish people leave home missing.
Peanut, or groundnut as it is called here, does most of the work: thickening, sweetening and carrying the heat.
