West Africa
Ghanaian food
Quieter than its neighbour and, Ghanaians will tell you, better seasoned. Rice cooked in stock rather than water, waakye stained deep with sorghum leaf, and kelewele, plantain cut and fried with ginger and pepper until the edges go dark.
The rivalry with Nigeria over jollof is real, ancient and entirely unresolved. Both are on this site. Pick a side.
